The reason could be in body movement

The Amazfit tracks your sleep using a combination of sensors such as the pedometer, heart rate sensor, gyroscope or accelerometer to detect your heart rate and body movement.

If there is almost no movement and your heart rate is low it will be recorded as deep sleep, however when your heart rate and body movement is high it will be considered light sleep.
